Macaroons are a family favorite. Ever since Karen was a little girl, she would go nuts over coconut – anything coconut was amazing. Rosalind’s Candy Castle in New Brighton, PA has a coconut mound egg for Easter that is nothing short of amazing. This macaroon recipe reminds Karen of those Easter eggs and when she makes these cookies, guests cannot stop eating them – moist coconut is the cornerstone of this cookie.
